Long before lime-cured ceviche, people on the Peruvian coast cured fish with acids from their own land—and the food remains left at the Caral sites are beginning to tell that story. Whether that acid came from chili peppers or from tumbo, though, food historians still disagree.

Overview
What is described here is not today's lime-style ceviche but the older layer that came before it. On the Pacific coast, people cured raw fish with local acids. Its exact age and form, and above all what supplied the sourness, are not yet settled.
The ingredients of this earlier dish were all long-established local foods: white fish, native chili peppers, seaweed, tumbo (banana passionfruit), and chicha (fermented maize drink). All of these were part of coastal life from early on and were staples of daily eating, and the sourness was drawn from these things at hand.
The setting was the fishing communities of the Pacific shore. Coastal fishing, and the craft of curing the fresh catch with acid or salt, form the base of the dish. The living remains at the Caral sites (roughly 3500–1800 BCE) preserve shellfish, chili peppers, and salt, and an old layer of acid-cured fish can be traced through the later Moche and Inca periods as well. Where the craft of curing fresh fish in a local acid met the fishing grounds, the forerunner of ceviche took shape.
How we know
This early layer holds two things at once: a prehistory grounded in archaeology, and a dispute over the source of its sourness.
In recent years the sense of that prehistory has grown much firmer. When the archaeologist Ruth Shady (San Marcos University) and colleagues excavated Caral and its port site Áspero, the refuse deposits yielded raw anchovies (anchoveta), the native arnaucho chili, and salt from the salt lagoons of Huacho. Further, an analysis of dental calculus from human remains at Áspero (Yseki et al., Scientific Reports, 2023) identified chili peppers (genus Capsicum, present in forty percent of samples), maize, and cassava for the period between 3000 and 1800 BCE. Not from secondhand report but from the very scraps that people ate, an old layer of raw fish, native chili, and salt has come into view.
On top of that, what provided the sourness remains contested. One side holds that fish was cured with tumbo or chicha. Against this, the food historian Maricel Presilla argues that tumbo's acidity is weak and slow-acting, and that in practice the curing was done with chili, seaweed, and salt—reasoning by analogy from a practice still kept in the fishing village of Huanchaco. That the Áspero calculus analysis found chili but neither tumbo nor passionfruit seems to favour the chili side, yet the method carries reservations and the matter is not decided.
What both accounts share is the understanding that, once citrus arrived, lime took over the seat of sourness. What is disputed is what did the curing before that citrus—not whether fish was cured with local acids at all. Setting this prehistory apart on its own lets us tell it without confusing today's lime-style ceviche with the older layer of acid-cured fish that preceded it.
